Baked French Toast
Ingredients:
4 ounces tub-style light cream cheese
4 ounces tub-style fat-free cream cheese
¾ cup Splenda Granular
3 tablespoons margarine, softened
2 teaspoons vanilla
1½ teaspoons cinnamon
1 cup egg substitute (like Egg Beaters)
2 large eggs
3 cups 1% milk
1 pound cinnamon raisin, French, or wheat bread (1-inch slices)
2 teaspoons powdered sugar (optional)
Directions:
2. In a large bowl, beat cream cheeses, Splenda, margarine, vanilla, and cinnamon until smooth. Blend in egg substitute (1/4 cup at a time) and then eggs.
3. Add milk and mix well. Soak bread slices in egg mixture and place into prepared pan. Pour remaining batter over slices. Cover and refrigerate for at least 1 hour and even overnight.
4. Preheat oven to 350°F. Bake for 40-45 minutes until puffed in center and lightly browned.
5. Remove from oven and lightly dust with powdered sugar if desired.

Autumn Pumpkin Bread
Ingredients:
¼ cup margarine, softened
10 ¾ teaspoons Equal® for Recipes or 36 packets Equal® sweetener or 1 ½ cups Equal® Spoonful™
1 large egg
2 large egg whites
½ to ¾ teaspoon orange extract
1 cup canned pumpkin
1 ¼ cups all-purpose flour
2 teaspoons baking powder

4. Heat fruit spread until melted in small saucepan; brush on bread and garnish with pecans.

Banana Raisin Bread
Ingredients:
1 cup mashed ripe bananas (about 2 medium)
3 tablespoons 2% milk
1 ½ cups Kellogg's® Special K® cereal
6 tablespoons stick butter or margarine, softened
1 cup Equal® Spoonful*
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup raisins
* May substitute 24 packets Equal sweetener
Directions:
2. Beat butter and Equal® on medium speed of electric mixer until fluffy. Beat in egg and vanilla until well blended. Stir in cereal mixture. Gradually add combined flour, baking powder, baking soda and salt mixing until combined. Stir in raisins.
3. Spread batter evenly in sprayed 9 x 5-inch loaf pan. Bake in preheated 350°F oven 45 to 50 minutes or until wooden pick inserted in center comes out clean. Let cool 10 minutes before removing from pan. Cool completely on wire rack.
4. Store tightly wrapped in plastic wrap.

Biscuits
Ingredients:
2 cups flour
3 teaspoons baking powder
½ teaspoon salt
¼ cup margarine
½ cup skim milk
Directions:
2. Cut in shortening thoroughly, until mixture looks like meal.
3. Stir in milk. Round up dough on a lightly floured board.
4. Knead lightly 20 to 25 times. Roll ½ inch thick.
5. Cut with a floured biscuit cutter. Place on an ungreased baking sheet.
6. Bake 10 to 12 minutes or until golden brown.

Blueberry Corn Muffins
Ingredients:
1 ¾ cup all-purpose flour
½ cup yellow cornmeal
1 ¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

½ cup unsalted Butter, softened
⅓ cup egg substitute
2 teaspoons vanilla extract
1 cup buttermilk
1 cup blueberries (frozen or fresh)
Directions:
2. Blend dry ingredients together in a medium sized mixing bowl. Set aside.
3. Blend butter in a mixing bowl until light and fluffy. Add egg substitute slowly. Scrape sides and continue to mix until butter forms small lumps. Add vanilla and buttermilk. Mix well. Add dry ingredients in three batches. Mix well and scrape the sides of the bowl after each addition.
4. Fold blueberries gently into batter. Scoop batter into prepared muffin cups, filling cups to the top. Bake in preheated oven 20 to 25 minutes or until done.

Chocolate Chip Pumpkin Muffins
Ingredients:
1 cup canned pumpkin
½ cup vegetable oil
¼ cup unsweetened applesauce
2 large eggs, beaten
1 tablespoon molasses
1 cup all-purpose flour
¾ cup whole wheat flour
1 cup Equal® Spoonful*
1 teaspoon baking powder
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon salt
¾ cup semi-sweet chocolate chips

Directions:
2. Combine pumpkin, oil, applesauce, eggs and molasses in a large bowl. Combine flours, Equal®, baking powder and soda, cinnamon, cloves and salt in a separate bowl. Gradually add dry ingredients to pumpkin mixture until all ingredients are just moistened. Stir in chocolate chips.
3. Spoon batter into muffin cups, filling ¾ full. Bake in preheated 375°F oven 18 to 20 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove muffins from pan and cool on wire rack. Serve warm or at room temperature.

Cranberry Walnut Muffins
Ingredients:
½ cup SPLENDA® Granular
1 ½ cups all-purpose flour
2 teaspoons baking powder

French Toast Ala Orange
Ingredients:
1 egg
2 egg whites
⅓ cup unsweetened orange juice
½ teaspoon vanilla
1 teaspoon grated orange peel
4 slices of bread
Directions:
2. Mix eggs together with the remaining ingredients, except the bread, and pour into a pie plate.
3. Dip the bread into the mixture. Heat frying pan over medium heat. Spray pan with non-stick cooking spray.
4. Lightly brown bread on both sides. Serve warm.
